As a Vegan, I do miss Omelets but with this wonderful plant-based product I don't feel left out any longer! A plant-based product called Just Egg is just Devine. It has the feel and taste of real eggs but without the guilt!
Heat fry pan on medium heat, add oil. Add the veggies to the warmed fry pan, cook for 3 minutes stirring occasionally then remove from pan and set aside. In the same pan, add 1 tsp oil, spread oil across pan, pour in the JUST egg, let it cook 1 minute and/or until edges are and bottom cook up. Run your spatula across the egg to check readiness to flip. Once the bottom has cooked, flip the JUST egg omelet. (if there is a build up of liquid in the middle of the omelet then swirl the egg around the pan. (take your time)
Add your veggies to the omelet and fold. Top with avocado and garnish with toast and potatoes.
