Before I was Vegan, I loved my chicken salads with avocado and spinach and now I don't need to feel like I'm missing out.
I tried several different plant-based chicken tenders and I absolutely love "Gardein Chicken Tenders". (Certified Vegan, Dairy Free and Kosher). They're just the right size for a salad
I like to use a vegan "honey mustard" dressing with this salad but a little Extra Virgin Olive Oil and Balsamic Vinegar is great as well.
Of course, if you don't have something on my recipe by all means substitute something you do have, remember to have fun with your food.
